Fun and Food

I love Cupcakes! They make me so very happy. But, because I am trying to make everything very healthy, it meant no more cupcakes, until... Hungry Girl came along and has some fantastic recipes. This is a fun one, frosted apple pie cupcakes. Frosting
1 cup cool whip, thawed
3 tbsp. fat free cream cheese, room temp
1/2 tbsp sugar free, fat free vanilla instant pudding
3/4 t sp. cinnamon
1 no-calorie sweetener packet


Cupcakes
2 cups yellow cake mix
2 cups peeled and chopped Fuji apples
1/2 cup sugar free applesauce
1/4 cup fat free sour cream
1 tbsp. cinnamon
1 tsp. baking powder
1/8 tsp. salt

Directions:
Preheat to 350
Combine all frosting ingredients and mix well. Refrigerate until cupcakes are ready to be frosted.
Combine all of the cupcake ingredients and mix until blended.
Line a 12 cup muffin pan with baking cups and spray. Evenly distribute the mixture. (I actually got about 16 cupcakes out of this and they were filled very full).
Bake for about 15 minutes and check. Let cool and then frost and enjoy.
Heres the damage: 1 cupcake, 155 calories, 2.5 grams of fat.
It was a great Sunday "cheat" day snack.



Our ward has a monthly dinner group for the girls, and we are lucky to have the head chef for Petroleum Club in our ward, and so we were invited to go. This is an amazing place, first of all for the great views, and of course the delectable food, and that night the great company.

So, we sat in the elevator for a long time without moving, but we had fun.

Mmmmm, those cupcakes look so yummy. I'm gonna steal that recipe and make them soon.
